Recipe : Cheese-Stuffed Celery

Makes 4 Servings

4 medium celery stalks (about 6" each), cut diagonally into thirds
2/3 cup low-fat cottage cheese
1/4 cup firmly packed fresh basil leaves
2 garlic cloves
1/8 teaspoon salt

With paring knife, slice a thin sliver off the curved side of each celery stalk so that
it lays flat. In small bowl, cover celery with ice water; soak 30 minutes. Drain; dry
well.
In mini food processor or blender, combine cottage cheese, basil, garlic and salt;
puree 1 minute, until smooth and creamy. Fill each celery stalk with one-fourth of the
cheese mixture.
To serve, on each of four serving plates, arrange three filled celery stalks.

EACH SERVING (3 pieces) PROVIDES: 1/2 Vegetable, 1/2 Protein
