Recipe : Chevre-Tomato and Basil Crostini
Chevre is more French than Italian, but its delicious flavor and lower fat content take it
across culinary borders. Garden fresh tomatoes and basil make these crostini irresistible.
Makes 4 servings
1 1/2 ounces chevre (goat cheese)
4 ounces crusty Italian bread, cut into eight 1/2-ounce slices and toasted
4 small plum tomatoes, each cut into 4 slices
1/4 teaspoon salt
Freshly ground black pepper, to taste
8 fresh basil leaves
Spread the chevre evenly over the bread slices; lay 2 slices of the tomato, slightly
overlapping if necessary, over each. Sprinkle evenly with salt and pepper and top
each with a basil leaf. Serve at room temperature.
SERVING (2 SLICES) PROVIDES: 1/2 Vegetable, 1/2 Protein, 1 Bread.
