Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Grilled Zucchini-White Bean Dip

This tastes best at room temperature, and it goes well with Grilled Bagel Chips.

Makes 8 servings

1 medium zucchini, thinly sliced lengthwise
1-2 garlic cloves, minced
2 teaspoons olive oil
2 cups drained rinsed white kidney (cannellini) beans
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons minced fresh parsley
1-2 tablespoons fresh lemon juice

Prepare grill for a medium fire, using direct method (see Cooking Methods).
Grill zucchini 5 minutes, turning once, until slightly charred and fork- tender.
In blender or food processor, combine zucchini, beans, parsley, juice, garlic, oil, salt
and pepper; puree until smooth.
Transfer to a serving bowl; cover and refrigerate if not serving at once.

SERVING (1/4 CUP) PROVIDES: 1/4 Vegetable, 1 Protein.
