Recipe : Hot Cheese Dip
Sometimes you just want something gooey, and this is it: hot, cheesy and as picante as
you like! Serve the dip with tortilla chips or cut up raw vegetables; it also makes a fine
topping for a baked potato.
Makes 4 servings
1 teaspoon corn oil
1/2 cup finely chopped onion
1/2 cup vegetable broth or low-sodium chicken broth
1 tablespoon cornstarch
1/4 teaspoon salt
Pinch ground red pepper
3 ounces extra-sharp cheddar cheese, shredded
1 cup finely diced plum tomatoes
1 medium jalapeno pepper, seeded, deveined and minced
In medium saucepan, heat oil; add onion. Cook over medium heat, stirring
frequently, 3-4 minutes, until onion is tender.
In small bowl, with wire whisk, combine broth, cornstarch, salt and red pepper,
blending until cornstarch is dissolved. Add broth mixture to onion mixture; cook,
stirring constantly, 2 minutes, until mixture begins to thicken. Reduce heat to low;
simmer, stirring frequently, 5 minutes, until mixture is very thick.
Add cheese to broth mixture. Cook, stirring constantly, 2 minutes, until cheese is
melted. Remove from heat; stir in tomatoes and jalapeno pepper; serve
immediately.
