These are much more delicious than the greasy concoctions served in many Tex-mex
restaurants! To prepare individual servings, arrange the tortilla pieces in small shallow
ramekins and divide the toppings evenly on the chips.

Makes 4 servings

Four 6" corn tortillas, each cut into eighths
3 medium poblano peppers, roasted, peeled, seeded and sliced (see Roasting Fresh
Chile Peppers)
2 servings Salsa Cruda*
3/4 ounce sharp cheddar cheese, shredded
3/4 ounce Monterey Jack cheese, shredded
1/4 cup nonfat sour cream
1/4 cup plain nonfat yogurt

Preheat oven to 325oF. Spray baking sheet with nonstick cooking spray.
Place tortilla pieces in a single layer on baking sheet; bake 20-30 minutes, until
golden and crisp.
Preheat broiler.
Arrange baked tortilla pieces, point-side out, in small flameproof baking dish;
sprinkle evenly with peppers. Top tortilla mixture with Salsa Cruda, then cheddar
and Monterey Jack cheeses; broil 4" from heat 3-4 minutes, until cheese is
bubbling.
In small bowl, combine sour cream and yogurt; spoon over tortilla mixture. Serve
immediately.

EACH SERVING PROVIDES: 1 1/2 Vegetables, 1/2 Protein, 1 Bread, 20 Optional
