Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Roasted Pepper and Mozzarella Bocconcini

Smoky-sweet peppers, creamy cheese and pungent herbs make this an irresistible
appetizer.

Makes 4 servings

1 medium green bell pepper, roasted* (juices reserved) and cut into 1" strips
1 medium red bell pepper, roasted* (juices reserved) and cut into 1" strips
1 medium yellow bell pepper, roasted* (juices reserved) and cut into 1" strips
1/2 fluid ounce (1 tablespoon) dry white wine
2 teaspoons olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme leaves
1 teaspoon wine vinegar
1 garlic clove, minced
Freshly ground black pepper, to taste
6 ounces skim-milk mozzarella cheese, cut into 24 equal cubes

In a large bowl, combine the reserved pepper juices with the wine, oil, oregano,
basil, thyme, vinegar, garlic and black pepper; add the mozzarella and toss to coat.
Cover and let stand 30 minutes.
Drain the mozzarella cubes; discard liquid. Wrap each with a pepper strip and
secure with a toothpick. Arrange on serving platter.

SERVING (6 CUBES) PROVIDES: 1/2 Fat, 1 1/2 Vegetables, 2 Proteins, 5 Optional
