Recipe : Salsa Chipotle
Chipotle peppers are smoked, dried jalapeno peppers, so flavorful that they give an almost
meaty taste to sauces and stews. Use this sauce on meat, poultry, eggs and bean dishes, or
drizzle onto tacos or over burritos. Try it on a baked potato with a dollop of plain nonfat
yogurt and a sprinkling of chives. Recipe may be prepared ahead; refrigerate, covered,
for up to one week. Reheat before serving.
Makes 4 servings
4 large plum tomatoes, halved and roasted (see Roasting Tomatoes)
4 medium tomatillos, husked and roasted (see Roasting Tomatillos)
2 large garlic cloves, roasted and peeled (see Roasting Garlic)
1 teaspoon pureed canned chipotle peppers in adobo sauce
1 teaspoon corn oil
In food processor or blender, combine tomatoes, tomatillos and garlic; puree until
smooth. Add peppers; process just until combined.
In small nonstick skillet, heat oil; add tomato mixture. Cook over high heat, stirring
constantly, 5 minutes, until mixture is thickened.
EACH SERVING (1/4 CUP) PROVIDES: 1/4 Fat, 1 1/2 Vegetables
