Recipe : Salsa Verde

This sauce must be made the day you serve it; if made ahead, it loses flavor and texture. It
is a fine accompaniment to fajitas, enchiladas, fish and poultry.

Makes 8 servings

6 medium tomatillos, husked and roasted (see Roasting Tomatillos)
1 medium jalapeno pepper, seeded and deveined
1/4 cup sliced scallions (white portion with some green)
6 fresh flat-leaf parsley sprigs
6 fresh cilantro sprigs
1 teaspoon fresh lime juice or white-wine vinegar
1/4 teaspoon salt

In food processor or blender, combine tomatillos, pepper, scallions, parsley, cilantro,
juice and salt; puree until smooth, adding water, a teaspoon at a time, until mixture is
the consistency of thin cream. Transfer to serving bowl; let stand 30 minutes, until
flavors are blended.

EACH SERVING (3 TABLESPOONS) PROVIDES: 1/2 Vegetable
