Makes 4 Servings

3 cups chopped seeded plum tomatoes
3 tablespoons shredded fresh basil
3 tablespoons chopped fresh cilantro
1 tablespoon minced green bell pepper
2 teaspoons minced scallion
2 garlic cloves, minced
1/2 teaspoon coarse (kosher) salt
1 tablespoon red wine vinegar

In medium bowl, combine tomatoes, basil, cilantro, bell pepper, scallion, garlic and
salt; toss well. Let stand 30 minutes; drain off any liquid that accumulates.
Sprinkle vinegar over tomato mixture; toss again.

EACH SERVING PROVIDES: 1 1/2 Vegetables
