Recipe : Sauteed Peppers

When you taste the soft, creamy texture and the concentrated flavor of these peppers,
you'll swear there has to be more than just half a teaspoon of oil per serving. Serve them
as an appetizer or a side dish, layer them on your favorite sandwich, or toss them into a
salad.

Makes 4 servings

4 medium green and red Italian frying peppers, quartered and seeded
4 medium garlic cloves, sliced
2 teaspoons olive oil
1/4 teaspoon salt
Freshly ground black pepper, to taste
1 teaspoon balsamic vinegar

In a large nonstick skillet over medium-low heat, combine the frying peppers, 1 cup
hot water, the garlic, oil, salt and black pepper. Cover; cook, stirring occasionally and
adding 1/2 cup water as needed, 20 minutes, until the peppers are tender and the
liquid is evaporated.
Add the balsamic vinegar; toss lightly. Divide evenly among 4 plates and serve hot,
warm or at room temperature.

SERVING (1 CUP) PROVIDES: 1/2 Fat, 2 Vegetables.
