In Italian, this is called "anointed bread." Fruity extra virgin olive oil lends its
unmistakable flavor to this most basic--and delectable--of appetizers.

Makes 4 servings

4 ounces crusty Italian peasant bread, cut into four 1-ounce slices and toasted
1 large garlic clove, halved
2 teaspoons extra virgin olive oil
2 teaspoons freshly grated Parmesan cheese
2 teaspoons minced fresh flat-leaf parsley
Freshly ground black pepper, to taste

While it is still warm, rub each slice of toast with a cut side of the garlic clove.
Drizzle evenly with the oil; then sprinkle evenly with the cheese, parsley and pepper.

SERVING (1 SLICE) PROVIDES: 1/2 Fat, 1 Bread, 5 Optional Calories.
