Recipe : Spicy Potato Chips
These baked chips make great snacks; dip them into White Bean-cilantro Dip, Quick Bean
Dip or fresh salsa.
Makes 6 servings
2 teaspoons mild or hot chili powder
3/4 teaspoon ground cumin
1/2 teaspoon salt
15 ounces baking potatoes, pared and very thinly sliced
Preheat oven to 425oF. Spray 2 baking sheets with nonstick cooking spray.
In small bowl, combine chili powder, cumin and salt.
Arrange potato slices in a single layer on prepared baking sheets; spray lightly with
nonstick cooking spray. Bake 1 batch at a time 7-10 minutes, until golden brown and
crispy.
Transfer first batch of potatoes to large bowl. Sprinkle potatoes with half the
seasoning mixture; toss to coat. Transfer coated chips to serving bowl. Repeat with
remaining chips and seasoning mixture.
EACH SERVING (1 1/2 OUNCES) PROVIDES: 1/2 Bread
