Recipe : Spicy Tomato Salsa

This classic salsa is a delightful accompaniment to any grilled meat, chicken or fish--or
serve it with fresh-cut veggies or pita wedges toasted on the grill. Be sure to use ripe
tomatoes, as they provide most of the flavor.

Makes 4 servings

1 1/2 cups seeded diced tomatoes
2 teaspoons white vinegar
3/4 cup diced onions
2 medium garlic cloves, minced
2 tablespoons minced fresh cilantro
1/4 teaspoon salt
1 tablespoon minced jalapeno pepper (wear gloves to prevent irritation)

In medium nonreactive bowl, combine tomatoes, onions, cilantro, jalapeno pepper,
vinegar, garlic and salt; stir well. Cover and set aside at least one hour to blend
flavors before serving.

SERVING (1/2 CUP) PROVIDES: 1 Vegetable.
