Recipe : Spinach and Avocado Guacamole
This appetizer-salad, with plenty of tomatoes and onions, gets a lot of mileage out of the
rich avocado. For the best flavor and texture, be sure the avocado is perfectly ripe. Serve
as a salad or on a bed of lettuce with tortilla chips for dipping.
Makes 8 servings
1 ripe medium avocado, peeled, pitted and cut into quarters
2 medium tomatoes, finely diced
1 medium jalapeno or serrano pepper, seeded, deveined and minced
1 cup minced onions
1/4 cup minced fresh cilantro
2 teaspoons fresh lime juice
1/4 teaspoon salt
In medium bowl, combine 1 avocado quarter, 1/4 cup of the tomatoes, half the pepper,
1 tablespoon of the onions and half the cilantro; with fork, mash mixture together into
a medium-coarse paste.
Finely dice remaining avocado quarters. Add diced avocado, the remaining tomatoes,
pepper, onions and cilantro, the juice and salt to paste mixture; stir to combine.
EACH SERVING (1/2 CUP) PROVIDES: 1 Fat, 1 Vegetable
