Recipe : Sweet and Spicy Indian Dumplings
Makes 4 servings
These dumplings are similar to a specialty of southern India, where they are a common
snack. Serve them with your favorite spicy Indian chutney.
1/2 cup cooked green peas
1/2 cup plain nonfat yogurt
1/4 cup shredded coconut
1/4 cup unsalted dry-roasted cashews, chopped
1/4 cup chopped cilantro
1 tablespoon grated peeled gingerroot
1/2 teaspoon salt
1 cup instant farina
3/4 cup boiling water
Pinch baking soda
1 tablespoon vegetable oil
In a medium bowl, combine the peas, yogurt, coconut, cashews, cilantro, ginger and
salt. In a small bowl, combine the farina and water; add to the yogurt mixture. Stir in
the baking soda. Divide the mixture into 16 balls and flatten them gently.
In a large nonstick skillet, heat the oil. Add the balls and cook until golden, 5 minutes
on each side.
SERVING PROVIDES: 2 Breads, 1 Fat.
