Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Tomato-Basil Crostini

Makes 4 servings

6 ounces French or Italian bread, cut into 12 equal slices
6 medium tomatoes, blanched, peeled, seeded and diced
1/2 cup packed fresh basil leaves, slivered
1 teaspoon olive oil
1 teaspoon fresh lemon juice
Pinch salt

Preheat broiler.
Place bread slices on baking sheet; broil 1-2 minutes on each side, until golden brown.
Turn broiler off; do not remove bread. Let bread cool in broiler until crispy.
In small bowl, combine tomatoes, basil, oil, lemon juice and salt; set aside.
Just before serving, spoon an equal amount of tomato mixture onto each slice of
bread.
