Recipe : Tomato Bruschetta

Bruschetta (broo-sHEH-tah) comes from an Italian word meaning "to roast over coals." The
classic version uses only juicy, ripe tomatoes and fresh, plump garlic.

Makes 4 servings

Four 2-ounce slices (1" thick) large round coarse French or Italian bread
2 large ripe tomatoes, cut into 8 slices each
4 fresh basil or mint leaves, slivered
1 large garlic clove, halved
2 teaspoons fruity olive oil

Prepare grill for a medium fire, using direct method (see Cooking Methods).
Toast bread slices on edges of grill, just long enough to crisp and char lightly; turn
and toast other sides.
Immediately rub with garlic halves; wrap loosely in foil and keep warm.
In small bowl, gently toss tomatoes with basil and olive oil; arrange on bread slices
and serve immediately.

SERVING (1 SLICE) PROVIDES: 1/2 Fat, 1 1/2 Vegetables, 2 Breads.
