Recipe : Tomato-Chipotle Pepper Dip

Serve this rich, hot dip with tortilla chips when friends come over. Serving a large group?
Just multiply the recipe to fit.

Makes 4 servings

2 teaspoons vegetable oil
3/4 cup chopped onions
1 medium dried chipotle pepper, seeded and chopped
1 garlic clove, minced
1/2 teaspoon ground cumin
1 medium red bell pepper, roasted, peeled and seeded (see Roasting Fresh Chile Peppers)
1/3 cup + 2 teaspoons tomato paste
2 tablespoons nonfat sour cream
1 tablespoon distilled white vinegar
1/2 teaspoon salt

In large nonstick skillet, heat oil; add onions, chipotle pepper, garlic and cumin. Cook
over medium-low heat, stirring frequently, 10 minutes, until onions are tender. Add 2
tablespoons water; cook, stirring frequently, 10 minutes longer, until vegetables are
golden brown.
Transfer onion mixture to food processor. Add bell pepper, tomato paste, sour cream,
vinegar and salt; puree until smooth.

EACH SERVING (1/4 CUP) PROVIDES: 1/2 Fat, 2 Vegetables, 5 Optional Calories
