Recipe : Tomato-Melon Salsa with Tortilla Chips

Atkins Diet Recipesmade tortilla chips are so much better than the store-bought ones, and they make a
great snack. Here, we've teamed them up with a wonderful sweet and savory salsa.

Makes 4 servings

3 1/2 cups chopped tomatoes
1 cup pared and chopped cantaloupe or honeydew melon
1/2 cup chopped red onion
1/4 cup chopped fresh cilantro
2 tablespoons fresh orange juice
2 tablespoons fresh lime juice
1 medium jalapeno pepper, seeded, deveined and finely chopped
Pinch salt
Eight 6" whole-wheat tortillas, quartered

To prepare salsa, in large bowl combine tomatoes, cantaloupe, onion, cilantro,
orange and lime juices, pepper and salt; refrigerate, covered, until chilled.
Preheat oven to 375oF. Spray baking sheet with nonstick cooking spray.
Arrange tortilla quarters in a single layer on large baking sheet; bake 15 minutes,
until golden and crisp. Serve with chilled salsa.
