Delicious And Healthy Low Carb Atkins Diet Recipe

The name may sound peculiar to our modern ears, but this drink is similar to many
medieval nonalcoholic beverages. Served very cold, it is wonderfully refreshing.
Makes 6 servings
6 ounces uncooked regular (not converted) long-grain rice
Zest of 1 lime*
5 cups boiling water
1/2 cup granulated sugar
1 teaspoon almond extract
1/4 teaspoon ground cinnamon
1 cup cold water
Twisted strips of lime zest, to garnish*
In blender, combine rice and zest of 1 lime; process until very fine. With
blender off, add 2 cups of the boiling water; transfer mixture to 2-quart
heatproof container, scraping blender jar with rubber spatula to remove all of
mixture.
Add remaining 3 cups boiling water, the sugar, almond extract and cinnamon;
stir to combine. Cool to room temperature; refrigerate, covered, overnight.
Line medium sieve with 3 layers of cheesecloth; place over medium bowl. Strain
rice mixture through sieve, squeezing cheesecloth to extract as much liquid as
possible; discard solids. Stir cold water into liquid; refrigerate, covered, until
chilled. Stir before serving; serve garnished with zest.
