Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Cheddar Cornbread

Makes 8 servings

1 1/2 cups yellow cornmeal
3 ounces extra-sharp cheddar cheese, shredded
1/3 cup + 2 teaspoons all-purpose flour
3/4 ounce grated Parmesan cheese
2 teaspoons double-acting baking powder
1 teaspoon granulated sugar
3/4 teaspoon salt
1 cup skim milk
1 egg, beaten

Preheat oven to 425o F. Spray a 9" square baking pan with nonstick cooking
spray.
In medium bowl, combine cornmeal, cheddar cheese, flour, Parmesan cheese,
baking powder, sugar and salt. In small bowl, with wire whisk, combine milk and
egg. Add wet ingredients to dry; stir just until combined.
Pour cornmeal mixture into prepared baking pan; bake 20-25 minutes, until
golden brown on top and toothpick inserted in center comes out clean. Cool
slightly, then cut into 16 squares.

EACH SERVING (2 SQUARES) PROVIDES: 3/4 Protein, 1 3/4 Breads, 15 Optional
