Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Cheese Popovers
Makes 4 servings
2/3 cup skim milk
1/2 cup + 2 tablespoons all-purpose flour
2 teaspoons olive oil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Pinch ground red pepper
2 eggs, beaten
1 1/2 ounces extra-sharp cheddar cheese, grated
2 tablespoons grated Parmesan cheese
Preheat oven to 450o F. Spray twelve 2 3/4" shiny aluminum muffin or popover
cups * with nonstick cooking spray.
In medium bowl, with wire whisk, combine milk, flour, oil, salt, black pepper and
red pepper, blending until combined; blend in eggs.
Spoon 1 tablespoon batter into each prepared cup; sprinkle evenly with cheddar
and Parmesan cheese. Top with remaining batter. Bake 15 minutes; reduce oven
temperature to 350o F. Bake 15 minutes longer, until sides of popovers are firm.
Serve warm.
