Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Conchas (Sweet Rolls with Chocolate)
The name concha, which means "shell," was given to these light, chocolate-topped rolls
because of the shell pattern stamped into the icing. They go well with Cafe de Olla for
an afternoon coffee hour.
Makes 12 servings
Sweet Rolls:
1 1/4 teaspoons active dry yeast
3 tablespoons lukewarm (110oF) water
2 1/2 cups all-purpose flour
1/4 cup granulated sugar
1/4 teaspoon salt
3/4 cup egg substitute
1 tablespoon corn oil
Icing:
1/4 cup confectioners sugar
1 tablespoon unsweetened cocoa powder
1/2 teaspoon ground cinnamon
2 tablespoons skim milk
Spray large bowl with nonstick cooking spray.
In small bowl, sprinkle yeast over lukewarm water; stir to combine. Let stand 10
minutes, until yeast is dissolved.
In food processor, combine all but 1 tablespoon of the flour, and the sugar and
salt; with on-off motion, pulse processor until mixture is blended. Add egg
substitute and oil to flour mixture; process to combine. With machine on, add
yeast mixture; process 1 minute, until dough forms a ball and cleans sides of bowl.
Transfer dough to prepared bowl; press down. Refrigerate dough, covered loosely
with plastic wrap, 8-12 hours.
Punch down dough. Sprinkle work surface with remaining 1 tablespoon flour;
transfer dough to prepared surface. Divide dough into 12 equal pieces; form each
piece into a ball.
Spray shiny baking sheet with nonstick cooking spray. Place balls 2" apart on
prepared baking sheet; spray balls lightly with nonstick cooking spray. Let balls
rise in warm, draft-free place, covered loosely with plastic wrap, 1 hour, until
almost doubled in size.
Preheat oven to 350oF. Adjust oven racks to divide oven into thirds.
Bake in upper third of oven 20-25 minutes, until rolls are lightly browned around
edges and sound hollow when tapped. Transfer rolls to wire rack to cool slightly.
Meanwhile, to prepare icing, in small bowl, combine sugar, cocoa and cinnamon.
Add milk; stir until mixture is smooth enough to spread.
. Spread an equal amount of icing on each warm roll; cool. With round cookie
cutter or sharp knife, make concentric semicircles into icing, forming a shell
pattern.
