Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Corn Crackers

These very crisp, thin crackers have a delicious corn taste that goes well with soups
and cheeses, but they are also great on their own.

Makes 4 servings

3/4 cup masa harina (corn flour)
3 tablespoons all-purpose flour
2 teaspoons granulated sugar
1 teaspoon double-acting baking powder
3/4 teaspoon salt
1 cup skim milk
1 egg, beaten
1 tablespoon corn oil
1 tablespoon stick margarine, melted

Preheat oven to 350oF. Spray baking sheet with nonstick cooking spray.
In medium bowl, combine masa harina, flour, sugar, baking powder and salt. Add
milk, egg, oil, and margarine; with wire whisk, blend until smooth.
Drop batter by teaspoonsful, 2" apart, onto prepared baking sheet, making 24
crackers; bake 7-10 minutes, until golden brown on bottom. Turn crackers over;
bake 6-8 minutes longer, until golden brown around edges. Turn oven off; let
crackers stand in oven 15 minutes. Transfer crackers to wire rack to cool.

EACH SERVING (6 CRACKERS) PROVIDES: 1/4 Milk, 1/2 Fats, 1/4 Protein, 1 1/4

VARIATION:

Buttery Corn Crackers: Substitute 1 tablespoon lightly salted butter, melted, for the
margarine; reduce Fat Selection to 3/4 and increase Optional Calories to 3
