Delicious And Healthy Low Carb Atkins Diet Recipe

Makes 10 Servings

1/4 cup cornmeal
1/4 cup boiling water
1/4 cup all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon granulated sugar
1/4 teaspoon salt
1/2 cup cooked corn kernels, well drained
1 egg
1/4 cup skim milk
2 teaspoons stick margarine, melted
1/2 teaspoon butter flavoring

In large bowl, stir boiling water into the cornmeal and let stand 30 minutes. In
small bowl, combine flour, baking powder, granulated sugar and salt. Stir in the
corn kernels. In another small bowl, combine egg, milk, margarine and butter
flavoring.
Add egg mixture to soaked cornmeal; mix well. Add flour mixture, and beat just
until well blended. Do not overbeat.
Heat a nonstick skillet over medium heat until a drop of water sizzles in it. Drop
batter by 1 1/2 tablespoonfuls onto skillet, and cook until bubbles form all over
the top of batter. Turn; cook the other side until golden brown. You can do several
at a time in a large skillet or griddle. Serve hot.

EACH SERVING (3 cakes) PROVIDES: 1/4 Bread, 35 Optional Calories
