Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Garlic Knots
Though perhaps not authentically Italian, these savory rolls, redolent of garlic, are a
perfect example of Italian-american ingenuity.
Makes 8 servings
1 pound thawed frozen pizza dough
2 tablespoons all-purpose flour
1 tablespoon + 1 teaspoon olive oil
2 large garlic cloves, minced
1/4 teaspoon coarse salt
Spray a large bowl with nonstick cooking spray. Place the dough in the prepared
bowl and turn to coat all sides. Cover with plastic wrap or a damp towel and let
rise in a warm, draft-free place, until it doubles in volume, about 1 hour.
Preheat the oven to 375o F. Spray a baking sheet with nonstick cooking spray.
Divide the dough into eight equal pieces. Sprinkle a work surface with the flour.
Roll each piece of dough to an 8" length and tie into a knot. Place on the prepared
baking sheet. Bake 35 minutes, until golden brown. Cool on a wire rack 10-15
minutes.
In a small nonstick skillet over low heat, combine the oil and garlic; cook 3
minutes, until the garlic is barely golden. Brush the mixture evenly over each knot
and sprinkle evenly with the salt. Serve immediately.
SERVING (1 GARLIC KNOT) PROVIDES: 1/2 Fat, 2 Breads, 10 Optional Calories.
