Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Moo Shoo Pancakes
Makes 4 servings
1/2 cup + 1 tablespoon whole-wheat flour
1/2 cup + 1 tablespoon all-purpose flour (reserve 1 tablespoon)
In medium bowl, combine whole-wheat and all-purpose flours. Add 5 tablespoons
water; stir with wooden spoon until smooth dough forms, 3-4 minutes. Knead
dough until soft and elastic, 3 minutes.
Sprinkle work surface with reserved tablespoon flour; turn out dough and divide
into 8 equal pieces. Roll each into a 6" circle, 1/8" thick. Layer on plate between
sheets of wax paper; cover with plastic wrap and refrigerate until ready to use,
up to 2 hours. (If pancakes shrink slightly, roll them out again just prior to
cooking.)
Place medium nonstick skillet over medium-high heat 30 seconds. Add 1 pancake
and cook, turning every 10 seconds, until light brown spots appear on both sides,
about 30 seconds. Repeat to make 8 pancakes. Wrap in foil and keep warm until
ready to use.
SERVING (2 PANCAKES) PROVIDES: 1 1/2 Breads, 0 grams Fat, 3 grams Fiber.
