Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Ship's Crackers
These crunchy, puffed crackers are irresistible; serve them with soup or salads, or
with steaming cups of Mexican Hot Chocolate . They will keep for weeks in an airtight
container.
Makes 16 servings
1 cup + 3 tablespoons lukewarm (110oF) water
2 tablespoons unsalted stick margarine, at room temperature
1 envelope active dry yeast
1 3/4 teaspoons salt
1/2 teaspoon granulated sugar
3 1/4 cups + 2 tablespoons all-purpose flour
Spray 2 shiny baking sheets with nonstick cooking spray.
In medium bowl, combine lukewarm water, margarine, yeast, salt and sugar; let
stand 10 minutes, until margarine is almost melted.
In large bowl or food processor, combine flour and water mixture; knead 10
minutes or process 1 minute, until dough is smooth and elastic.
Transfer dough to work surface. Divide dough into 32 equal pieces; roll each
piece into a ball. Place balls 2" apart on prepared baking sheets; spray balls lightly
with nonstick cooking spray. Let balls rise in warm, draft-free place, covered
loosely with plastic wrap, 1-1 1/2 hours, until almost doubled in size.
With fingertips, press each ball to 1/4" thickness; let rise in warm, draft-free
place, covered loosely with plastic wrap, 1 hour, until soft and puffy.
Preheat oven to 300oF. Adjust oven racks to divide oven into thirds.
Place one baking sheet on each oven rack; bake 45 minutes. Switch and rotate
baking sheets; bake 45 minutes longer, until crackers are lightly browned and
crisp. Transfer crackers to wire rack to cool.
