Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Skillet-Grilled Cornbread

You can "bake" this cornbread on the top rack while cooking dinner on the rest of the
grill.

Makes 8 servings

1 1/4 cups all-purpose flour
1 cup skim milk
3/4 cup cornmeal
1 egg
1/4 cup granulated sugar
2 tablespoons vegetable oil
2 teaspoons baking powder

Prepare grill for a hot fire, using direct method (see Cooking Methods) . Spray a
10" cast-iron skillet with nonstick cooking spray.
In large bowl, combine flour, cornmeal, sugar and baking powder. Stir in milk, egg
and oil; mix until dry ingredients are thoroughly moistened.
Pour batter into prepared skillet; place skillet on top rack of grill or at least 10-
12" from heat. Close grill cover or tent with foil. Bake about 15 minutes, until
golden and toothpick inserted in center comes out clean. Cut into 8 wedges and
serve.

SERVING (ONE-EIGHTH OF CORNBREAD) PROVIDES: 3/4 Fat, 1 1/2 Breads, 50
