Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Spanish Bar Cakes

Redolent of cinnamon and clove and apples, these fruit-filled mini loaves will make
your kitchen smell divine.

Makes 8 servings

1 cup all-purpose flour
1/2 cup whole-wheat flour
1/2 cup firmly packed dark brown sugar
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon ground nutmeg
Pinch ground cloves
1 egg
2 egg whites
1 tablespoon + 1 teaspoon vegetable oil
2 3/4 cups unsweetened applesauce
1/2 cup sliced cooked carrots
1/2 cup dried currants

Preheat oven to 400o F. Spray two 5 x 3" nonstick loaf pans with nonstick
cooking spray.
In medium bowl, sift together all-purpose and whole-wheat flours, sugar,
cinnamon, salt, baking soda, baking powder, nutmeg and cloves; set aside.
In food processor, combine egg and egg whites until frothy, 30 seconds. With
machine running, gradually drizzle in oil; process 10 seconds more. Add 3/4 cup
of the applesauce and the carrots; process until smooth.
Add flour mixture; pulse twice to blend. Add currants; pulse 4 times to finely
chop.
Divide batter between prepared loaf pans. Bake 35-40 minutes, or until toothpick
inserted in center comes out clean. Turn out onto wire rack and cool completely.
Serve with remaining applesauce on the side.

SERVING (ONE-FOURTH OF LOAF WITH 1/4 CUP APPLESAUCE) PROVIDES:
1/2 Fat, 1 Fruit, 1 Bread, 70 Optional Calories; 4 grams Fat, 3 grams Fiber.
