Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Spoon Bread

Makes 4 servings

1 cup yellow cornmeal
1 1/3 cups boiling water
1 cup low-fat (1.5%) buttermilk
1 egg, beaten
1 tablespoon stick margarine, melted
1 teaspoon baking soda
3/4 teaspoon salt

Preheat oven to 375o F. Place an 8" square baking pan in oven.
In medium bowl, combine cornmeal and boiling water, stirring to mix well.
In small bowl, with wire whisk, combine buttermilk, egg, margarine, baking soda
and salt. Pour buttermilk mixture into cornmeal mixture; with wire whisk, blend
until smooth.
Remove baking pan from oven; spray with nonstick cooking spray.
Pour cornmeal mixture into prepared baking pan; bake 20-25 minutes, until
golden brown and crusty on top (mixture will be soft inside).

EACH SERVING PROVIDES: 1/4 Milk, 3/4 Fat, 1/4 Protein, 2 Breads
