Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Whole-Wheat Chapatis (Indian Bread)
These soft pancakes, pronounced "chah-pAH-tee," are a staple in Indian restaurants.
You'll be surprised at how easy they are to make. Serve them with soups or stews, or
use like tortillas to wrap sandwich fillings.
Makes 8 servings
2 1/2 cups minus 1 tablespoon whole-wheat flour
1/4 teaspoon kosher salt
In large bowl, combine 2 cups of the flour, 1 cup water and the salt. Stir until
mixture forms a soft dough.
Sprinkle work surface with 1/4 cup of the remaining flour. Turn out dough onto
prepared surface and knead 5 minutes, until smooth.
Spray large bowl with nonstick cooking spray; place dough in bowl. Cover loosely
with plastic wrap or damp towel; let stand at room temperature 30 minutes.
Sprinkle work surface with the remaining 3 tablespoons flour. Divide dough into
8 equal pieces; roll each into a 6" circle, 1/8" thick. Shake off excess flour.
Place medium nonstick skillet over medium-high heat until very hot, 45 seconds-1
minute. Add 1 chapati and cook 2-3 minutes, until lightly browned. Turn and cook 1
minute longer, or until slightly puffed. Repeat with remaining chapatis.
SERVING (1 CHAPATI) PROVIDES: 1 1/2 Breads, 10 Optional Calories; 1 gram Fat,
5 grams Fiber.
