Recipe : Amaretti-Stuffed Peaches

Make sure your peaches aren't too soft--if they feel firm but yield to gentle pressure
around the stem, they're just right.

Makes 6 servings

6 ripe but firm medium peaches, halved and pitted
6 amaretti cookies (1" diameter), crushed
1 tablespoon granulated sugar
1 egg white
1 1/2 teaspoons unsalted whipped butter

Preheat the oven to 375o F. Spray a 9" square baking pan with nonstick cooking
spray.
With a grapefruit spoon, scoop some pulp from each peach half to make a deep
well. Chop the pulp and place in a small bowl. Place the peach halves, cut-side up,
in the prepared pan.
Add the cookies, sugar and egg white to the reserved pulp, stirring until
combined. Spoon the mixture evenly into each peach half and dot each with 1/4
teaspoon of the butter. Bake 30 minutes, until bubbling. Serve warm or at room
temperature.

SERVING (2 STUFFED PEACH HALVES) PROVIDES: 3/4 Fat, 1 Fruit, 1/2 Protein,
