Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Arroz con Leche (Rice Pudding)

This lusciously creamy rice pudding tastes as rich as you'd expect, but because it's
made with low-fat ingredients, such as skim milk and egg substitute, you can enjoy it
without worry!

Makes 4 servings

4 ounces uncooked regular (not converted) long-grain rice
Two 2 x 1/2" strips lime zest
One 1" piece cinnamon stick
Pinch salt
2 cups skim milk
1/4 cup + 1 tablespoon granulated sugar
1/2 cup egg substitute
2 tablespoons raisins, chopped
1 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
1 teaspoon stick margarine, melted

Spray 1-quart baking dish with nonstick cooking spray.
In medium saucepan, combine rice, zest, cinnamon stick, salt and 1 1/4 cups
water; bring liquid to a boil. Reduce heat to low; simmer, covered, 20 minutes,
until rice is tender and water is absorbed.
Add milk and 1/4 cup of the sugar to rice mixture. Increase heat to medium;
cook, stirring frequently, 15 minutes. Remove from heat; remove and discard zest
and cinnamon stick.
Preheat broiler.
Add egg substitute, raisins and vanilla to rice mixture. Transfer mixture to
prepared baking dish; smooth top.
In small bowl, combine ground cinnamon and reserved 1 tablespoon sugar. Brush
rice mixture evenly with margarine; sprinkle with cinnamon mixture. Broil 4"
from heat, 2-4 minutes, until lightly browned; cool to lukewarm or room
temperature.
