Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Blueberry Gingerbread

Makes 8 servings

1 cup + 2 tablespoons all-purpose flour
1/4 cup firmly packed dark brown sugar
1 teaspoon ground ginger
1/2 teaspoon cinnamon
1/2 teaspoon double-acting baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup plain nonfat yogurt
1/4 cup molasses
1 1/2 cups fresh or frozen blueberries

Preheat oven to 350o F. Spray an 8" round cake pan with nonstick cooking spray.
In medium bowl, combine flour, sugar, ginger, cinnamon, baking powder, baking
soda and salt.
In small bowl, combine yogurt and molasses. Add yogurt mixture and 1/2 cup
boiling water to flour mixture; with wire whisk, blend just until combined.
Transfer mixture to prepared cake pan; sprinkle evenly with blueberries. Bake
20-25 minutes, until toothpick inserted in center comes out clean.
