Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Broiled Pineapple

Makes 4 servings

8 drained canned pineapple slices (no sugar added)
1 tablespoon + 1 teaspoon firmly packed dark brown sugar
1 1/2 fluid ounces (3 tablespoons) dark rum

Preheat broiler. Spray an 8" square metal baking pan with nonstick cooking
spray.
Place pineapple slices in a single layer in prepared baking pan. Sprinkle
pineapple evenly with sugar, then rum. Broil 4" from heat 5-7 minutes, until
topping is bubbly. Turn broiler off; serve immediately or let pineapple stand in
oven until ready to serve.
Just before serving, place 2 pineapple slices on each of 4 plates; drizzle each
portion with an equal amount of pan juices.
