Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Cappuccino Custard

Makes 4 Servings

1 cup low-fat (1%) milk
1/3 cup instant nonfat dry milk powder
1 tablespoon + 1 1/2 teaspoons instant espresso powder
1 tablespoon granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/8 teaspoon cinnamon

Preheat oven to 325oF. Spray four 6-ounce custard cups with nonstick cooking
spray.
In medium saucepan, combine milk, milk powder, espresso powder and sugar.
Cook over medium-high heat, stirring frequently, 3-4 minutes, until mixture boils
and sugar is dissolved; remove from heat.
In medium bowl, with whisk , beat eggs until light; gradually whisk in hot milk
mixture and vanilla extract. Fill each prepared custard cup with one-fourth of
the custard mixture; evenly sprinkle each with cinnamon.
Arrange cups in medium shallow baking pan; pour hot water (not boiling) halfway
up pan. Bake 20-25 minutes, until custard is set, or a knife inserted in center
comes out clean. Cover and refrigerate until chilled.

EACH SERVING PROVIDES: 1/2 Milk, 1/2 Protein, 10 Optional Calories
