Recipe : Cinnamon-Apple Tortilla Cups

This delightful dessert makes wonderful use of the tortilla as a cup for a filling. Try
filling the cups with fresh berries in season or any other favorite fruit for a fast and
elegant treat.

Makes 4 servings

1 tablespoon + 1 teaspoon granulated sugar
1 teaspoon ground cinnamon
Four 6" flour tortillas
4 small baking apples, pared, cored and shredded
3/4 cup plain nonfat yogurt
1/4 teaspoon ground nutmeg
1/4 cup whipped topping

Preheat oven to 350oF.
In small bowl, combine 2 teaspoons of the sugar and 1/2 teaspoon of the
cinnamon.
Lightly spray both sides of tortillas with nonstick cooking spray; sprinkle both
sides evenly with sugar mixture.
Press tortillas into 4 muffin or custard cups, forming 4 tortilla cups; bake 5-7
minutes, until edges begin to brown. Remove from oven; place cups on wire rack
to cool (if any tortilla cups have become misshapen, reshape while still warm).
In medium bowl, combine apples, yogurt, nutmeg, remaining 2 teaspoons sugar
and remaining 1/2 teaspoon cinnamon; refrigerate, covered, until chilled.
Remove tortilla cups from muffin cups; fill each with an equal amount of apple
mixture. Top each portion with 1 tablespoon whipped topping; serve immediately.
