Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Coal-Roasted Stuffed Apples

These apples make great little treats at the end of a meal. Roast them in the coals
while you're grilling the main course.

Makes 4 servings

1 tablespoon + 1 teaspoon firmly packed light or dark brown sugar
1/4 cup raisins
Four 1-ounce gingersnap cookies, crushed into crumbs
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
2 teaspoons reduced-calorie tub margarine
1/4 teaspoon ground ginger
4 small apples, cored with top 1/4" sliced off

Prepare grill for a medium fire, using direct method (see Cooking Methods).
In small bowl, combine sugar, cinnamon, nutmeg and ginger; sprinkle 1/2
teaspoon of the mixture inside each cored apple. Gently press 1 tablespoon
raisins into each cavity followed by 1 tablespoon gingersnap crumbs; top with 1/2
teaspoon margarine. Sprinkle each with remaining 3/4 teaspoon sugar mixture.
Fold an 18" square of heavy-duty foil in half. Place one apple in center of
rectangle; fold foil around apple tightly, leaving a long foil "stem" as a handle.
Repeat with remaining apples. Nestle apples, "stem"-side up, among coals along
the edge of grill. Roast 40-50 minutes. (Or bake in 400o F oven 40-50 minutes.)
With tongs, carefully remove apple packets from coals. Cool 3-5 minutes, then
carefully peel back foil. Transfer to 4 dessert plates and serve immediately.

SERVING (1 APPLE) PROVIDES: 1/4 Fat, 1 1/2 Fruits, 1/4 Bread, 25 Optional
