Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Coffee Flan with Chocolate Sauce

Makes 4 servings

Flan:
1 1/2 cups evaporated skimmed milk
3/4 cup egg substitute
3 tablespoons granulated sugar
1 teaspoon instant coffee powder, dissolved in 1 tablespoon hot water
1/2 teaspoon vanilla extract

Sauce:
1 tablespoon boiling water
1 fluid ounce (2 tablespoons) coffee liqueur
Fresh mint leaves, to garnish

Preheat oven to 325oF. Adjust oven rack to divide oven in half. Spray 4 custard
cups with nonstick cooking spray.*
To prepare flan, in medium bowl, combine milk, egg substitute, sugar, dissolved
coffee powder and vanilla; divide evenly among prepared cups.
Place roasting pan on center oven rack; add filled cups. Carefully pour boiling
water into pan to a depth of about 1"; bake 40-45 minutes, until a knife inserted
into center of one flan comes out clean.
Carefully remove roasting pan from oven and cups from pan; set cups aside to
cool. Refrigerate, covered, at least 4 hours.
To prepare sauce, in double boiler or small microwave-safe bowl, combine
chocolate and boiling water. Set double boiler over barely simmering water; cook
5 minutes, or microwave on High (100% power), 15 seconds. Stir until smooth,
then stir in liqueur; set aside.
Loosen flans from cups by running tip of pointed knife around edge of each flan.
Invert individual dessert plate onto each flan; invert plates and cups together.
Remove cups, allowing flans to fall onto plates. Spoon sauce evenly over flans.

EACH SERVING (1 FLAN + 1 TABLESPOON SAUCE) PROVIDES: 3/4 Milk, 3/4

* If desired, flan can be prepared in 4-cup ovenproof ring mold; increase baking time
to 45-55 minutes.
