Recipe : Fresh Peaches Stuffed with Chocolate Amaretti
Makes 4 servings
1 egg, beaten
4 amaretti cookies (1" diameter), crumbled
3 tablespoons plain dried bread crumbs
2 tablespoons unsweetened cocoa powder
Granulated sugar substitute to equal 1 tablespoon + 1 1/2 teaspoons sugar
4 medium peaches, halved and pitted
Preheat oven to 400o F.
In small bowl, combine egg, cookie crumbs, bread crumbs, cocoa powder and
sugar substitute.
Fill each peach half with an equal amount of crumb mixture, mounding as
necessary. Place in 2-Quart shallow baking dish; bake 20 minutes, until peaches
are soft and crumb mixture forms a light crust. Serve warm or at room
temperature.
