Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Frozen Vanilla-Cinnamon Custard

Serve this rich frozen dessert as the finish to an elegant meal. Top it with Poached
Fruit with Rum and Chile Peppers or some pureed fresh mango if you like, or make the
ultimate dessert sandwich by freezing it in a 9" square pan, cutting it into squares
and placing it between graham crackers.

Makes 4 servings

1/2 cup skim milk
1/4 cup granulated sugar
One 2" piece cinnamon stick or 1/4 teaspoon ground cinnamon
1 cup evaporated skimmed milk
1/2 cup egg substitute
1 1/2 teaspoons vanilla extract
1 drop yellow food coloring (optional)

In small saucepan, combine skim milk, sugar and cinnamon; cook over low heat,
stirring frequently, 10 minutes. Remove from heat; let stand 30 minutes, until
flavors are blended.
Transfer milk mixture to medium bowl; add evaporated skimmed milk, egg
substitute, vanilla and food coloring if using. Refrigerate, covered, until chilled.
Remove and discard cinnamon stick from milk mixture if using. Transfer mixture
to ice-cream maker; freeze, following manufacturer's directions.
Transfer frozen mixture to 1-quart freezer-safe container; freeze at least 2
hours longer.

EACH SERVING (1/2 CUP) PROVIDES: 1/2 Milk, 1/2 Protein, 55 Optional Calories

VARIATION:

FROZEN VANILLA-RUM CUSTARD: Add 1 fluid ounce (2 tablespoons) dark rum
along with evaporated skimmed milk; increase Optional Calories to 7
