Recipe : Fruit Parfait

Makes 4 servings

1 cup whole strawberries, halved
1 medium kiwifruit, pared and sliced
1/2 cup drained canned pineapple chunks (no sugar added)
1 small mango, pared, pitted and cut into chunks
1 fluid ounce (2 tablespoons) dark rum
1 tablespoon fresh lime juice
1 tablespoon honey

In 4 wine or parfait glasses, layer strawberries, kiwifruit and pineapple.
In food processor or blender, combine mango, rum, lime juice and honey; puree
until smooth.
Spoon an equal amount of mango mixture over each portion of fruit.
