Drowned Frozen Yogurt By pouring hot espresso over frozen yogurt, this becomes a
coffee float in a dish.

Makes 4 servings

1 tablespoon slivered lemon zest
1 teaspoon granulated sugar
16 fluid ounces (2 cups) sugar-free vanilla or coffee nonfat frozen yogurt
1/2 cup hot brewed decaffeinated espresso coffee

Place the lemon zest in a small saucepan; add 1/4 cup water. Bring to a boil;
remove from heat and let stand 10 minutes. Drain the zest and pat dry with a
paper towel. Place the zest in a single layer on wax paper and sprinkle evenly
with the sugar; let stand 30 minutes.
Scoop 3/4 cup frozen yogurt into each of 4 dessert dishes; pour 2 tablespoons
espresso over each. Garnish each portion with one-fourth of the zest and any
remaining sugar. Serve immediately.
