Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Ginger-Poached Fruit

This sweet treat is a lovely light dessert, a good way to end a meal. If you want to be a
little decadent, try it over frozen yogurt.

Makes 4 servings

1 cup fresh orange juice
2 tablespoons chopped pared fresh ginger root
1 tablespoon granulated sugar
1 large pear, pared, cored and cut into eighths
1 large apple (8 ounces), pared, cored and cut into eighths
1/4 cup raisins, dried currants or dried cranberries
1 tablespoon fresh lemon juice

In medium saucepan, combine orange juice, 1/2 cup water, the ginger and sugar;
bring to a boil. Reduce heat to low and simmer 4 minutes. Add pear; increase heat
to medium-low and simmer, partially covered, 10 minutes. Add apple and raisins
and cook, stirring occasionally, 15 minutes.
With slotted spoon, transfer fruit to serving bowl; increase heat to high and boil
liquid 3 minutes, until reduced to syrup. Stir in lemon juice. Pour syrup over
fruit. Serve warm or cool.

SERVING (1/2 CUP FRUIT AND 2 TABLESPOONS SYRUP) PROVIDES: 2 Fruits,
10 Optional Calories; 1 gram Fat, 4 grams Fiber.
