Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Lemon Snow with Fresh Fruit Salad

This is a refreshing version of the old-fashioned dessert that separates into two
layers as it sets. Serve in your prettiest glass dessert cups or goblets.

Makes 6 servings

1 tablespoon unflavored gelatin
1 1/2 cups boiling water
1/4 cup + 2 tablespoons granulated sugar
1 teaspoon grated lemon zest
1/2 cup fresh lemon juice
1/4 teaspoon natural lemon extract
3 small oranges
1 small red apple, cored and diced
1 small green apple, cored and diced
24 large seedless red grapes, halved

Sprinkle gelatin over 1/4 cup cold water; let stand 15 minutes.
In medium bowl, dissolve gelatin mixture in boiling water. Add sugar; stir to
dissolve completely. Add zest, juice and extract. Cover and refrigerate until
thick and syrupy but not set, about 2 hours.
With electric mixer, whip gelatin mixture to frothy consistency and pour into 6
serving cups. Cover and refrigerate until set, about 2 hours.
Meanwhile, peel oranges over a medium bowl to collect juices. Section oranges.
Place orange sections, apples and grapes in bowl with juice; cover and chill.
To serve, divide the fruit salad evenly among the filled serving cups.
