Recipe : Lemon Sorbet

In Southern Italy, lemon trees grow everywhere. As a result, lemons are a popular
ingredient. This refreshing dessert evokes the land and its foods.

Makes 12 servings

1 cup granulated sugar
1 teaspoon grated lemon zest
1 cup fresh lemon juice

Place the sugar in a medium saucepan; add 4 cups water; bring to a boil. Reduce
the heat to low; simmer, stirring occasionally, 3 minutes, until the sugar is
dissolved. Remove from the heat and stir in the zest and juice. Cool 30 minutes;
refrigerate, covered, at least 3 hours or overnight.
Transfer the mixture to an ice cream freezer and freeze according to the
manufacturer's instructions. Divide evenly among 12 bowls and serve.
