Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Marsala Creme
Makes 4 servings
8 large pitted prunes
1 1/2 cups thawed frozen light whipped topping (8 calories per tablespoon)
2 fluid ounces (1/4 cup) dry marsala wine
1 teaspoon granulated sugar
Fresh mint leaves or strips of lemon zest to garnish (optional)
In small bowl, combine prunes and hot water to cover; let stand 5 minutes, until
prunes are softened. Drain, reserving liquid.
Transfer prunes to mini food processor; puree until smooth, adding reserved
liquid, if necessary, until smooth but still thick.
Transfer prune puree to medium metal mixing bowl. Add whipped topping, wine
and sugar to prune puree; with wire whisk, beat until smooth. Freeze, covered, 30
minutes, just until firm.
Just before serving, with wire whisk, beat prune mixture until smooth. Divide
mixture evenly among 4 dessert dishes; top each portion with a mint leaf or strip
of lemon zest if desired.
