Recipe : Noodle Kugel with Fruit

Makes 6 servings

If you have never tried a kugel, this is the one to try. It has all the components of a
satisfying sweet brunch or lunch entree or filling dessert. It is sweet, crisp, smooth . .
. perfect!

4 1/2 ounces wide egg noodles
2 eggs
1/3 cup low-fat (1%) cottage cheese
3 tablespoons granulated sugar
1 teaspoon vanilla extract
1 1/2 small apples, pared, cored and grated

Preheat oven to 400o F. Spray 9" square baking pan with nonstick cooking spray.
In large pot of boiling water, cook noodles 5-6 minutes, until tender. Drain,
discarding liquid; set noodles aside.
Meanwhile, in medium bowl, with wire whisk or fork, beat eggs until just frothy.
Add cheese, sugar and vanilla, blending until mixture is combined.
Stir apples and noodles into egg mixture; transfer to prepared dish. Bake 30
minutes, until kugel is firm and lightly browned. Divide evenly among 6 plates and
serve.

SERVING (ONE-SIXTH OF KUGEL) PROVIDES: 1/4 Fruit, 1/2 Protein, 1 Bread, 25
