Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Orange Bread Pudding with Figs
A sweet, rich-tasting dessert, just right for festive occasions. Serve after a light
meal; it is quite filling. It's also an excellent substitute for the traditional plum
pudding at Christmas.
Makes 8 servings
1/2 cup fresh orange juice
6 ounces dried figs, finely diced
1 1/4 cups fat-free egg substitute
1 1/2 cups evaporated skimmed milk
3 tablespoons granulated sugar
2 teaspoons grated orange zest
1 teaspoon vanilla extract
4 ounces whole-wheat bread, diced
In small saucepan, combine juice and figs; bring to a boil. Remove from heat; let
stand until cool.
Adjust oven racks to divide oven in half. Preheat oven to 350o F. Spray 2-quart
baking dish with nonstick cooking spray.
In large bowl, whisk together egg substitute, milk, sugar, zest and vanilla. Add
bread and fig mixture; let stand 10 minutes; then pour bread mixture into
prepared baking dish. Place baking dish in roasting pan.
Place roasting pan on center rack of oven; carefully pour 1" hot water into
roasting pan. Bake 45-55 minutes, until just set. Let stand 30 minutes before
serving warm, or cool to room temperature.
SERVING (1/8 OF PUDDING) PROVIDES: 1/4 Milk, 1 Fruit, 1/2 Protein, 1/2 Bread,
45 Optional Calories; 1 gram Fat, 3 grams Fiber.
